Summer is concluding, time to start harvesting. We will use what we planted in spring to make traditional summer foods. Join the Foodways 1790 culinary historians as they prepare typical vintage foods using an authentic hearth, recipes and cookware.
Who Are the Culinary Historians?
The Foodways 1790 Culinary Historians are a specialized historic cooking and educational group dedicated to preserving early American hearth cooking techniques, recipes, and culture. Operating largely out of Baltimore County, they bring late 18th-century culinary traditions to life through immersive workshops and public demonstrations.
In the 1790s, American cuisine was highly localized and deeply seasonal, dominated by:
- Hearth Cooking: Using cast iron skillets, Dutch ovens, and open firepits to roast meats, simmer stews, and bake bread.
- Local Staples: Heavy reliance on fresh garden produce, salted or preserved meats, cornmeal, and seasonal wild game.
- Cultural Fusion: The foundational combination of Native American ingredients (such as squash, beans, and corn), European cooking techniques, and West African culinary traditions brought over and adapted in colonial kitchens.
Cooking in the Cabin
Free participants watch; paid participants ($12) assist the Foodways 1790 culinary historians in preparation of the meal.
